*Feeding a team of firefighters requires hearty, filling meals that are easy to prepare and big on flavor, and sometimes, the best recipes are born from a mix of creativity, convenience, and a lot of hungry mouths to feed.
At Cedar Rapids Fire Department’s Station 4, one particular dish has gained legendary status for its simplicity and surprising sweetness: Firehouse 4 Cornbread, SIMPLYRECIPES reports.
The recipe, passed down from a firefighter captain, uses just two boxed mixes, one corn muffin mix and one yellow cake mix. When combined, they create a cornbread that’s softer, fluffier, and significantly sweeter than traditional versions. It’s the kind of side dish that works perfectly with hearty mains like chili, smoky grilled meats, or pulled pork.
The cooking method is just as important as the mix. The crew swears by a hot cast-iron skillet to get the right crust. An 11- or 12-inch pan is placed in the oven and preheated to 375°F. While it heats, the dry ingredients are whisked together in one bowl, while eggs, oil, milk, and water go into another. Once combined, the batter is poured into the hot, buttered skillet and baked for 25 to 30 minutes until golden and a toothpick comes out clean.
At Station 4, it’s common to top slices with honey, maple syrup, or butter. While the cornbread leans into dessert territory, the balance it strikes with savory dishes makes it a firehouse staple.
The recipe was shared by the firefighter’s relative, who gave it a try at home. “It didn’t disappoint,” they said, noting how well it paired with tangy BBQ pork and how much their family enjoyed it.
Whether served as a side or a sweet treat, Firehouse 4 Cornbread is proof that sometimes, the best food traditions come from the most unexpected places.
